عنوان Food Security Transitions in Aging Demographics: A Framework for Sustainable, Equitable, and Sensory‑Responsive Nutrition

چکیده Population aging is actively reshaping global food security priorities by introducing evolving nutritional, functional, and sensory requirements. Older adults frequently experience significant shifts in taste, smell, oral processing, texture perception, and appetite regulation, which directly influence food acceptance. When combined with socio-economic challenges, such as fixed incomes, reduced mobility, social isolation, and chronic illness, these physiological changes heighten vulnerability to food insecurity, malnutrition, and diet-related non-communicable diseases. This review proposes a comprehensive framework for sustainable and equitable nutrition in aging populations, structured around the interconnected dimensions of availability, access, utilization, and stability. A critical emphasis is placed on “sensory-responsive food design” within the utilization dimension. This approach includes age-appropriate texture modification, flavor enhancement, and aroma optimization to ensure ease of consumption, hedonic satisfaction, and adequate nutritional intake. Furthermore, the framework highlights the necessity of food safety, culturally meaningful profiles, and resilient supply systems. To preserve functional ability, independence, and dignity, dietary approaches must remain sensory-attuned, affordable, and perceptually accessible. Ultimately, integrating older adults into food, health, and social-care systems, while addressing systemic inequalities related to income, gender, and disability, is essential to mitigate malnutrition, prevent avoidable care dependence, and support healthier, more equitable aging outcomes across diverse populations.
