Antimicrobial Resistance in Foodborne Pathogens of Animal Origin: A One Health Perspective

چکیده
Antimicrobial resistance (AMR) is an important One Health challenge at the interface of animal health, food safety, and human health. The use of antimicrobials in food-producing animals can contribute to the selection and dissemination of resistant bacteria, while antimicrobial resistance determinants may circulate through the food chain. This review aimed to examine antimicrobial resistance among foodborne pathogens of animal origin and its implications for food safety. Recent scientific literature published between 2019 and 2026 was reviewed, with particular emphasis on Escherichia coli, Salmonella spp., and Campylobacter spp. in food-producing animals and the food chain. Available evidence indicates that resistant bacteria and resistance genes can persist and circulate across different stages of food production, creating challenges for effective surveillance and control. Responsible antimicrobial use in veterinary medicine, integrated surveillance, appropriate hygiene practices, and coordinated interventions across animal, food, environmental, and human health sectors are therefore essential. A One Health approach can support the monitoring and control of AMR and contribute to improving the microbiological safety of animal-derived foods.
