Foodborne Zoonoses and Antimicrobial Resistance: A One Health Approach to Food Safety

چکیده
Foodborne zoonoses and antimicrobial resistance (AMR) are important problems that affect animal, human, food, and environmental health. This review aimed to examine the relationship between foodborne zoonotic pathogens, antimicrobial resistance, and food safety from a One Health perspective. The available literature was reviewed with a focus on important foodborne pathogens, including Salmonella spp., Campylobacter spp., Listeria monocytogenes, and pathogenic Escherichia coli, as well as the role of food-producing animals in the spread of antimicrobial-resistant bacteria. The reviewed studies show that animals can serve as important reservoirs of zoonotic pathogens and antimicrobial resistance. These hazards can enter the food chain during animal production, slaughter, processing, transportation, retail, and food preparation. Contaminated water, animal waste, and the environment can also contribute to the spread of these hazards between animals, food, and humans. The findings indicate that responsible antimicrobial use, good hygiene practices, proper food handling, and effective surveillance are important for reducing these risks. Cooperation between veterinary, medical, food, and environmental sectors is also necessary. A One Health approach can help improve food safety and reduce the spread of antimicrobial resistance through the food chain.
